Colombia Finca El Diviso Double Anaerobic Natural Sidra Coffee BeansCoffee Bean Intro:
At the 2022 World Barista Championship, champion barista Anthony Douglas used Colombian Sidra coffee beans in the competition. Coincidentally, at the 2019 World Barista Championship, the then-champion barista Jooyeon Jeon also used Sidra coffee (though it was from Ecuador). This has drawn attention to what Sidra coffee is.

After researching, Puerqian found that Sidra coffee originally comes from Pichincha Province in Ecuador, where the local variety is called Sydra. According to available information, Sidra is a laboratory-bred variety, a hybrid of Typica and Red Bourbon. Later, genetic comparisons revealed that Sidra shares similar genes with Ethiopian landrace varieties. Therefore, some scholars speculate that Sidra may be a hybrid of an experimental Ethiopian variety exported to Ecuador and the local Bourbon coffee variety in Ecuador. Currently, the Sidra variety is mainly grown in countries such as Ecuador and Colombia.

Following the exposure from Anthony Douglas’s competition, people began seeking the champion barista’s coffee beans. The Sidra beans used by Anthony come from Finca El Diviso in the Huila region of Colombia.

Finca El Diviso is located in Huila, one of Colombia’s most renowned coffee-growing regions. Situated at an altitude of approximately 2,100 meters, the farm covers an area of 14 hectares. It is a family-run coffee estate, founded in 1996 by Jose Uribe Lasso, and has over 25 years of coffee-growing experience.
It is now primarily managed by Nestor Lasso, who is young and energetic. His grandfather introduced him to the magnificent world of coffee, and his father inherited the farm, excelling even more in coffee cultivation. Influenced by his family, Nestor continuously strives for excellence in coffee farming and processing, cultivating twelve coffee varieties including Caturra, Colombia, Sidra, Castillo, Gesha, and Bourbon.

The Lasso family jointly manages the estate, and the continuous improvement in coffee bean quality has brought better returns for Nestor. They have successfully established a new large-scale farm, growing and producing higher-quality coffee beans, and are constantly striving to become a great family-owned estate.
For Nestor, Finca El Diviso is a fortunate new beginning. He believes that the fertile land in Huila allows anyone who is hardworking to escape poverty by growing coffee crops in nutrient-rich soil.
Given that Sidra is still relatively rare in cultivation and possesses floral and fruity characteristics comparable to Gesha—exhibiting flavors such as peach, citrus, grape, and honey, with moderate acidity and a round mouthfeel—its price is also relatively high.
Puerqian has also imported Sidra coffee beans from Finca El Diviso. These beans are processed using the double anaerobic natural method, highlighting the coffee’s rich acidity. Puerqian uses a medium-light roast, and cupping notes include rich fruit flavors such as grape, passionfruit, strawberry, and dried apricot.

Colombia is the world's third-largest coffee exporter, mainly producing Arabica coffee, and it is also the country that exports the most Arabica beans. Colombia is rich in products; in particular, coffee, flowers, gold and emeralds are known as the "four treasures." Colombia is located in the northwest of the South American continent, bordering Panama in Central America. Seen from an overhead view, its western side looks as if it has been scratched by a cat; from north to south, it leaves three vertical claw marks. The country's famous producing regions are scattered among these Andes mountain ranges with fertile volcanic soil.
Brewing Tips:
Filter: V60 Water Temperature: 90-91ºC Coffee Dose: 15g Coffee-to-Water Ratio: 1:15 Grind Size: Granulated Sugar (sifted through a #20 sieve to 78% extraction) Three-Stage Pour: Place the coffee grounds into the V60 filter, wet the coffee bed with twice the amount of water, bloom for 30 seconds, then pour in a small, steady stream in a circular motion from the inside out until reaching 125g for the first pour. Once the coffee bed drops to about half the height of the filter, continue pouring the third stage with the same fine stream up to 225g until all the coffee liquid has filtered through and the filter is removed. The total brew time is approximately 2 minutes (with a 10-second margin of error).

高温区风味整体以酸为主,苦味也比较明显,一般。但冷却后,中温区时甜味突出,苦感减少,醇厚度增加,冷却到30度左右时,终于明白这支豆子为什么叫花魁,果香味突出,入口百花齐放,百果争宠,余韵留长!
