About Yirgacheffe
Yirgacheffe was originally a small town in Ethiopia, located within the administrative region of Sidamo Province. Since ancient times, this town has been a wetland— the ancient word "Yirga" means "to settle down," and "Cheffe" means "wetland."

It was originally the name of a town in Ethiopia, the birthplace of coffee. With an elevation of around 1700-2200 meters and relatively low temperatures, coffee grows more slowly here, allowing ample time to accumulate more nutrients and flavor compounds. Due to the unique and high-quality flavors of the coffee beans produced, Ethiopian farmers take pride in their coffee having Yirgacheffe characteristics. In 2004, to promote its coffee, the Ethiopian government applied for a patent for the "Yirgacheffe" region name. Now, Yirgacheffe coffee has become synonymous with Ethiopia’s specialty coffee.
Coffee trees in the Yirgacheffe area are mostly grown in farmers’ backyards or intercropped with other crops in farmland, with small yields per household, making it typical garden coffee.

The so-called "Yirgacheffe flavor" often refers to rich jasmine floral notes, lemon or green lemon acidity, as well as sweet notes of peach, almond, and tea. Yirgacheffe coffee offers a layered, delicate richness, captivating taste, and sweet aftertaste. The phrase “coffee enters the mouth, and a hundred flowers bloom” describes it best—like the pleasant sensation of floral aromas stimulating the taste buds and nasal olfactory cells. Beyond the floral notes, the delicate body feels like silk massaging the mouth, creating a marvelous tactile experience.
Yirgacheffe Gedeo Zone Region
Gedeb is a township located below Kochere town, about 60 kilometers from Yirgacheffe town, and is a renowned premium coffee bean-producing region in Ethiopia. With an elevation of 1900-2200 meters—much higher than the average Yirgacheffe region—the advantage of high altitude makes Gedeb an exceptionally suitable area for coffee cultivation. It is an emerging micro-region gradually gaining recognition. Although the ECX auction market classifies this town under the Kochere region, it shares the same administrative level as Kochere town.

In the specialty coffee world, it can be distinguished from Kochere and regarded as a Yirgacheffe sub-region of the same tier. This town includes villages such as Worka Sakaro, Halo Bariti, Banko Gotiti, and Banko Dahato that produce coffee.
Gotiti Cooperative
The Gotiti Cooperative is located in the Wolkite region at the southeastern edge of Yirgacheffe. It was originally part of the Wolkite Cooperative under the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU). However, as the demand for traceability of green coffee beans grew, independent "single-origin" areas were gradually discovered by coffee enthusiasts worldwide. Thus, in 2012, Gotiti, with about 300 farmer members, independently established the "Gotiti Cooperative."

Gotiti village was one of the first areas to be independently recognized. Many smallholder farmers were also former members of the Wolkite Cooperative, so their coffee production skills are well-established. The Gotiti Cooperative is referred to as the last pristine land of Yirgacheffe, and therefore, it employs very traditional processing methods (washed and natural sun-dried).
The reason Yirgacheffe can have such a distinctive style is largely due to washed processing, in addition to its innate terroir. Ethiopia generally has high altitudes and abundant sunlight, which are highly suitable for sun-drying coffee cherries. Traditional sun-drying is rather crude—each farmer can do it in their own yard, often spreading cherries on rooftops or the ground to dry. These rough methods introduce many undesirable flavors and result in inconsistent coffee quality.
In 1972, the Ethiopian government introduced more advanced washed processing techniques and related equipment from Central and South America. Farms using the washed method must build washing tanks and have a continuous supply of fresh water, resulting in higher production costs. During processing, fermented beans are placed in tanks and agitated back and forth, using friction between the beans and the force of flowing water to clean the beans until they are smooth and spotless. Each step removes impurities and defective beans, resulting in more uniform green bean quality and higher trading prices compared to naturally dried coffee.

Washing not only significantly reduces the defect rate of coffee but also gives Yirgacheffe its bright citrus tones and elegant white floral notes, with an overall flavor that is bright, delicate, and clean. Currently, the Gotiti Cooperative coffee beans available at Fore Street are processed using the washed method, featuring floral notes, bright citrus acidity, lemony undertones, and a silky smooth mouthfeel.
Region Intro:
Ethiopia is located in a land full of wonders, and all the Arabica coffees we have or have not tasted originate here. Documented historical evidence of coffee in Ethiopia dates back to the 4th-5th centuries AD. At that time, due to wars between ethnic groups, coffee spread with people's conquests and migrations to Yemen on the Arabian Peninsula. Later, with the rise of the Ottoman Empire and the spread of Islam, through various circumstances, Europe began to have coffeehouses and the coffeehouse culture that gradually formed along with them. Subsequently, Central America began to cultivate coffee, and India and Indonesia in Asia began large-scale commercial coffee cultivation. Having gone through several hundred years in this way, we have only now arrived at today's third wave of specialty coffee.
Brewing Tips:
Recommended Brewing Method: Pour Over Filter: V60 Water Temperature: 90-92°C Coffee Dose: 15g Coffee-to-Water Ratio: 1:15 Grind Size: Medium-Fine (80% through a 20-mesh sieve according to Chinese standards) Brewing Technique: Pulse Pouring Bloom with 30g of water for about 30 seconds, then pour in 125g of water in small circular motions centered around the coffee bed. When the water level drops and is about to expose the coffee grounds, continue pouring to reach 225g total. Remove the filter when the water level is about to expose the coffee bed again. (Start timing when blooming begins.) Total brew time: 2 minutes 00 seconds.
