Colombia Cauca
Colombia is currently the world’s third-largest coffee producer, after Brazil and Vietnam. Commercial coffee cultivation began in the 1830s, and by the 20 century, coffee became the dominant export crop. The mountainous terrain and diverse tropical microclimates provide ideal growing conditions, with 75% of total production exported, making it the country’s most important source of foreign exchange.
Cauca Province is a Colombia Coffee Growers Association (FNC) certified origin region, with an average elevation of 1758m and a maximum elevation reaching up to 2100m. The region’s topography, precipitation, temperature, and volcanic soils create optimal conditions for coffee cultivation. 80% The area is mountainous, with parallel mountain ranges in the east and central regions forming part of the Andes. The central mountain range includes two major volcanoes, Sotara and Petacas. Along the borders, Cauca Province, like other southwestern producing regions, experiences a distinct single-peak precipitation pattern ( monomodal), with the dry season primarily occurring from 8 to 9 each year. The subsequent rainy season brings concentrated coffee flowering, followed by the next year’s centralized harvest.
Paradise Estate Finca El Paraiso
Paradise Estate (Finca El Paraiso) is a coffee farm managed since Diego Samuel. Initially, it was a small family-owned farm of just 2008 by Mr. 2.5 hectares. The owner reinvested surplus harvests into coffee agricultural research, continuously exploring how to better produce premium flavors.

2015 In his first participation in a local regional competition, he won first place, gaining industry recognition and further motivation to promote specialty coffee cultivation.
Through his company, Indestec (Innovacion y Desarrollo Tecnologico para la Caficultura), Diego, he developed innovative technologies to enhance and stabilize coffee quality. He says he enjoys stepping out of his comfort zone because it keeps driving his continuous improvement.

Paradise Estate currently grows mainly Bourbon Bourbon, Laurina Bourbon Laurina, Gesha Gesha, and Castillo Castillo, with plans to experiment with more varieties.
Processing Method
Anaerobic (Anaerobic) fermentation has been a highly popular post-harvest processing method in recent years. Typically, coffee cherries are fermented in an anaerobic environment before being removed for the next stage of processing, which is called anaerobic fermentation.
After removal from the anaerobic environment, the coffee cherries are depulped by machine, and the mucilage-covered beans are placed in plastic bags or other sealed containers for a second anaerobic fermentation. This two-stage anaerobic fermentation process is known as double anaerobic fermentation.

This Colombian Paradise Estate lot undergoes double anaerobic washed processing. After two rounds of anaerobic fermentation, the beans are removed from the anaerobic environment, washed to remove the mucilage layer, and then sun-dried until the moisture content is reduced to around 11%.
Coffee Variety
The variety of this lot is Castillo. Castillo。
Castillo is one of the most widely planted coffee varieties in Colombia, favored for its excellent resistance to leaf rust.
1961 In the CENICAFEs, research began on the Robusta-blooded Timor variety. Subsequently, CENICAFE continued development efforts, and in the 2002s, the second disease-resistant variety, Tabi (a hybrid of Typica, Bourbon, and Timor), was released. By the 2005s, the most successful disease-resistant variety at the time, Castillo, was launched. After the major leaf rust outbreak in 2008, Colombia heavily promoted Castillo cultivation.
