The coffee history of Katowa Estate (Kotowa) dates back a long time, with the story of its first-generation owner traceable to the late 19th century.

 Duncan Estate

A Canadian born in 1873, Alexander Duncan MacIntyre started his career in the fruit trade with his elder brother Joseph Albert McIntyre. Later, both brothers entered politics, with Alexander even becoming the youngest mayor of Port Alberni.

In 1916, his brother Joseph purchased a farm named Finca Carolin in Boquete, Panama. Though he only stayed there for a while, he spoke highly of the land after returning to Canada. Meanwhile, Alexander read several articles about Boquete in newspapers and was drawn to this land full of pristine charm. Fueled by curiosity and longing, he embarked on a journey to explore the unknown.

In 1925, Alexander decided to move from North America to settle in Boquete, Panama, and married a local woman named Angela Rosas. Like other immigrants, he chose to cultivate the land. After renaming the farm La Carolina, Alexander built a small coffee processing plant and began the coffee-growing story of the Kotowa family, marking the start of a new chapter for four generations to come.

Katowa is located at the foot of the Barú Volcano in western Panama, featuring dense vegetation, a unique microclimate, and fertile volcanic soil. Moisture from the Atlantic converges at elevations as high as 2500 meters, condensing into rainfall. The dry season offers long sunlight hours, providing ample water and sunshine for the coffee trees planted here, allowing them to fully absorb nutrients.

Currently, Katowa Estate is managed by the third generation, with Mr. Ricardo Koyner and his daughter Victoria at the helm.

Notably, besides being the estate owner, Mr. Ricardo also holds another identity: one of the founders of the Panamanian Specialty Coffee Association (SCAP) and its first president. Starting in the 1990s, many Panamanian coffee farmers recognized the challenges facing the industry and sought development opportunities. They turned to the Specialty Coffee Association of America (SCAA) for help. After years of effort, seven coffee farmer representatives began promoting the establishment of a Panamanian coffee organization in 1996 to enhance the country’s overall coffee competitiveness.

After taking over the estate, Mr. Ricardo understood the importance of branding and officially named his farm Cafe Kotowa Farms. In addition to retaining the inherited green bean processing plant, he purchased coffee roasting equipment and opened a brand coffee shop locally, aiming to sell products bearing the “Kotowa” name directly to broader markets in Europe and America.

Compared to other estates, the processing plant at Katowa is powered by flowing water, with the entire machine driven by wooden gears of varying sizes and manually sewn animal hides serving as conveyor belts to operate the machinery. In an era of scarce resources, this was undoubtedly very advanced equipment. Even more remarkably, this set of equipment remains well-preserved and is displayed within the estate, allowing visitors to experience the authentic history of Panama’s coffee industry.

Today, Katowa oversees a total of seven farms, five of which are well-known among coffee enthusiasts: Finca Kotowa DUNCAN (Duncan Estate), Finca Kotowa Don K (Don K Estate), Finca RIO CRISTAL (Crystal River Estate), Finca Kotowa TRADICIONAL (Traditional Katowa Estate), and Finca Kotowa LAS BRUJAS (Witch Estate). The other two newer farms, Mango and Redondo, have not yet released any coffee.

According to information obtained by Front Street, the word “Kotowa” originates from the language of the local indigenous Ngäbe people, meaning “high mountain.” Katowa’s logo is modeled after the main workforce of Panamanian coffee fruit pickers—a native group called Gnobe Bugle, also referred to as “Guaymíes” by locals.

To honor the first-generation farm owner, Duncan Estate is named after Mr. Ricardo’s grandfather, Alexander. Don K Estate commemorates his father, Richard Koyner—“Don” means “Mr.” in Spanish. The Witch Estate is named after the stream in front of the estate, as the flowing water often makes sounds resembling the “howls” of a witch from the primordial forest. Crystal River Estate, as the name suggests, refers to the sparkling, crystal-like light seen when the river glimmers under the sunlight, hence its melodious name.

Thanks to the consistent awards won by its estates in competitions, the “Katowa” brand has long been a household name locally. And if you mention Katowa coffee in China, many, like Front Street, would first think of Duncan Estate, frequently active in various competitions, and Witch Estate, which has been winning awards continuously in recent years.

The lot Front Street acquired this time is the Natural Caturra from Duncan Estate. As regular readers of Front Street know, the ripeness of coffee cherries at harvest greatly impacts the final quality. To deliver the most vibrant coffee aromas, Katowa Estate requires workers to carefully pick the cherries when they turn wine-red and promptly process them afterward to avoid over-fermentation of the pulp, which can produce unpleasant flavors.

To highlight its fragrant floral and fruity notes while emphasizing a caramelized sweetness, we opted for a medium-light roast and conducted timely cupping.

Brewing Tips:

Brewer: V60 Water Temperature: 91–93°C Dose: 15g Coffee-to-Water Ratio: 1:15 Grind Size: Fine sugar / EK43s setting 10 (20-mesh sieve yields 80%) Three-Stage Extraction: First, place 15g of coffee grounds into the brewer and tare the weight. The first pour: add 30g of water for a 30-second bloom, starting the timer. Use a small stream, pouring from the center outward in a circular motion, ensuring the entire coffee bed is saturated. Second pour: increase the water flow and add 95g of hot water to lift the coffee bed. Pour vertically and evenly, aiming for a total of 125g on the scale, completed around the 55-second mark. When the liquid level drops halfway, begin the third pour: use a small stream to gently circle and add 100g, avoiding excessive agitation to prevent channeling and under-extraction. Total brew water: 225g. Total drip time: approximately 1 minute 55 seconds to 2 minutes 10 seconds. Remove the brewer, swirl the server, and enjoy.
