Yunnan Geisha Coffee Beans from ChinaCoffee Bean Intro:
The history of Yunnan Geisha coffee cultivation is relatively short. The earliest research on planting Yunnan Geisha dates back to around 2012. It is understood that this batch of Yunnan Geisha coffee beans came from the Green Tip Geisha beans of Panama’s Elida Estate. At that time, only about 10 seeds were planted, so the research process was very cautious and meticulous.

It typically takes 3–4 years for coffee to go from cultivation to successful fruiting. Around 2016, when the second batch began to be cultivated after successful fruiting, the outside world started to hear about Yunnan Geisha coffee.
Green Tip coffee belongs to the highest grade of Geisha green beans among the Geisha varieties. The Geisha varieties planted in Central and South America may trace their lineage back to the T2722 variety originally labeled by CATIE in Costa Rica.
However, interestingly, each coffee estate has different conditions, and cross-pollination may occur. In addition, not all Geisha variety seeds from every estate come from CATIE—they might have been traded between estates.

The owner of the Finca Esmeralda estate, which popularized the Geisha variety, stated that early botanical descriptions indicated the Gesha cultivar had bronze-tipped young leaves, relatively modest cupping performance, and considerable fungal resistance. In contrast, Panamanian Geisha has light green young shoots, excellent cupping flavors, and resistance to leaf rust but not to the coffee leaf rust disease (Ojo de Gallo), which is most feared by Central and South American coffee farmers. There is still no definitive research on whether the Geisha variety in Panama is T2722.
Later, after Yunnan Geisha gained a reputation, other Yunnan estates also claimed to have planted some Yunnan Geisha coffee beans, with seeds sourced from Panama’s Finca Esmeralda.

Regardless of the estate, based on existing information, Yunnan Geisha coffee beans may have originated from Panama. However, their flavor profile does show clear differences compared to Panamanian Geisha coffee.
Panamanian Geisha coffee tastes good partly because it is grown at very high altitudes with extremely complex climates. To survive in this region, the Geisha variety has had to continuously refine its genes, inadvertently developing refined and captivating flavors. Additionally, Geisha is a delicate variety that requires shade trees to protect it from direct sunlight.
Currently, most Yunnan coffee is grown under direct sunlight, but the sunlight intensity is not as strong as in Central and South America, and the altitude is not as high either. The climate is warm with small day-night temperature variations, so the Geisha coffee grown here can be said to grow quite freely and ripen more easily.

Good coffee flavor depends on the variety’s genetics, soil, climate, and altitude. Geisha coffee grown at relatively lower altitudes lacks the refinement and richness of Panamanian Geisha due to terroir and climate factors. It often exhibits plum acidity, sweet-tart berry notes, as well as nutty and brown sugar flavors.
To enhance the body and richness of Yunnan coffee, anaerobic natural (sun-dried) processing is commonly used. After appropriate sterile fermentation, it brings more fermented flavors to the beans, improving their body. The sun-drying method also makes the sweetness of the coffee beans more pronounced.

Region Intro:
Yunnan Arabica coffee, Rubiaceae, Coffea, is mainly grown in Lincang, Baoshan, Simao, Xishuangbanna, Dehong and other prefectures. Arabica coffee is native to Ethiopia or the Arabian Peninsula.
Brewing Tips:
Filter: V60 Water temperature: 90–91°C Coffee dose: 15g Coffee-to-water ratio: 1:15 Grind size: Fine sugar-like (sieve through a #20 sieve to 78% extraction) Three-stage extraction: Place the coffee grounds in the V60 filter, wet the coffee bed with twice the amount of water, bloom for 30 seconds, then pour water in small streams in a circular motion from the inside out until reaching 125g for the first pour. Wait until the coffee bed drops to half the height of the filter, then continue pouring the second stage with the same fine stream until 225g. Continue until all the coffee liquid has filtered through, then remove the filter. Total time is about 2 minutes (with a 10-second margin of error).

高温区风味整体以酸为主,苦味也比较明显,一般。但冷却后,中温区时甜味突出,苦感减少,醇厚度增加,冷却到30度左右时,终于明白这支豆子为什么叫花魁,果香味突出,入口百花齐放,百果争宠,余韵留长!

用了龙哥的印尼之海 和千咖咖啡的这款豆子 味道的确不同 在v60和蛋糕杯都试了 v60会有印尼猫屎独特的味道 但是甜度没激发出来 蛋糕杯却很好的激发了 酸度在蛋糕杯上会更加柔和 总体来说 蛋糕杯做这款完胜
