Colombia is currently the world's third-largest coffee-producing country, after Brazil and Vietnam. Commercial coffee cultivation began in the 1830s, and by the 20 century, coffee had become the largest export crop. The mountainous terrain, combined with diverse tropical microclimates, provides ideal growing conditions. 75% of the total production is exported, making it the most important source of foreign exchange.

Cauca Province is a Coffee Origin Certified region in Colombia, with an average altitude of 1758m and a maximum altitude reaching up to 2100m. The region's terrain, precipitation, temperature, and volcanic soil create optimal conditions for coffee cultivation. 80% is mountainous, with parallel mountain ranges in the eastern and central parts, part of the Andes. The central mountain range includes two major volcanoes, Sotara and Petacas. Like other southwestern producing regions, Cauca's borders experience a distinct single-peak precipitation pattern ( monomodal), with the dry season primarily occurring from 8 to 9 each year. The subsequent rainy season brings a concentrated coffee flowering period, followed by the harvest season for the following year.
Paradise Estate Finca El Paraiso
Paradise Estate (Finca El Paraiso) is a coffee farm managed by Mr. Diego Samuel since 2008. Initially, it was a small family-owned farm of just 2.5 hectares. The owner reinvested the surplus from annual harvests into coffee agricultural research, continuously exploring how to better produce premium flavors.

2015, he first participated in a local regional competition and won first place. This breakthrough brought industry recognition and further motivated him to promote specialty coffee cultivation.
Through his company, Indestec (Innovacion y Desarrollo Tecnologico para la Caficultura), Diego, he has developed innovative technologies to enhance and stabilize coffee quality. He says he enjoys stepping out of his comfort zone because it keeps driving him to improve.

Paradise Estate currently grows varieties such as Bourbon Bourbon, SLN (Slender Bourbon) Laurina, Gesha Gesha, and Castillo Castillo, and plans to experiment with even more varieties.
Processing Method
Anaerobic (Anaerobic) fermentation has been a highly popular post-harvest processing method in recent years. Typically, coffee cherries are fermented in an anaerobic environment before being removed and processed further. This method is called anaerobic fermentation.
After being taken out of the anaerobic environment, the coffee cherries are depulped by machine, and the mucilage-covered beans are placed in plastic bags or other sealed containers for a second anaerobic fermentation. This process, involving two rounds of anaerobic fermentation, is called double anaerobic fermentation.
This Colombian Paradise Estate coffee undergoes double anaerobic washed processing. After two rounds of anaerobic fermentation, the beans are removed from the anaerobic environment and washed to remove the mucilage layer, followed by sun drying until the moisture content is reduced to around 11%.
Coffee Variety
The variety of this coffee is Castillo Castillo。
Castillo is one of the most widely planted coffee varieties in Colombia, favored for its excellent resistance to coffee leaf rust.
1961, CENICAFE began researching the Robusta-lineage Timor variety. Subsequently, CENICAFE continued its development, and in 2002, the second disease-resistant variety, Tabi (a hybrid of Typica, Bourbon, and Timor), was released. In 2005, the most successful disease-resistant variety at the time, Castillo, was introduced. After a major outbreak of coffee leaf rust in 2008, Colombia actively promoted the cultivation of Castillo.

Brewing Tips:
Recommended Brewing Method: Pour Over Parameters: Water Temperature: 90-91°C; Grind Size: Medium-Fine (80% passing through a 20-mesh sieve per Chinese standards); Coffee-to-Water Ratio: 1:15; Use a pulse pouring technique. Start with a 30g bloom for 30 seconds; pour in a small stream to reach 125g, then increase flow to 225g as the bed nears exposure, then remove the filter when the bed is about to show. (Start timing at bloom.) Total brew time between 2'00" and 2'10".
