Flavor Notes:

Panamanian coffee beans have a relatively full body with distinct sweetness and acidity. The mouthfeel is smooth, featuring a strong wine-like flavor, high sweetness, bright and vibrant acidity that is soft, and complex layers. Notes of tropical fruits, nuts, red wine, honey, and cane sugar are pronounced. When completely cooled, brown sugar flavors emerge.

          It is known that there are at least two published books themed on the bird-friendly and shaded cultivation practices of the Hartmann Estate, along with over ten papers published in scientific journals, demonstrating that its reputation extends not only throughout the coffee industry but also reaches the scientific community for its environmental conservation efforts.

        Today, the estate is managed by the third generation of the family. Mr. Ratibor Hartmann and his four siblings each take on different roles in the estate. They live together on the estate and make a living by growing coffee.


      The Legendary History of Hartmann (Hartmann) Estate

        Two of his brothers died in wars after enlisting. Luis Hartmann traveled through several countries with friends he had made until 1911 when he arrived in Panama and settled in Chiriquí Province in 1912, primarily operating in the Candelaria area. He built the first small wooden cabin in this pristine forest. The current Hartmann Estate is a family-run business, founded in 1940 by Ratibor Hartmann (son of Elías).

  The Hartmann family also manages and processes coffee for many other estates in Panama, such as the consistently winning Finca La Mula (Mule Estate) in the Best of Panama competition and the 90+ estate in Panama, both under the management of the Hartmann family. Although the estate remains very low-profile and rarely appears in the Best of Panama events, their coffee is among the finest in Panama. The Hartmann family has played an indispensable role in establishing Panama’s reputation in the coffee world.

    02| Processing Method

 

 

Wine Processing Method (also known as Carbonic Maceration Processing)

Also referred to as wine-style processing, it draws inspiration from the winemaking process. The wine processing method allows control over pH levels, as well as temperature and humidity.

 

 

 

 

The coffee bean wine processing method, also called wine-style processing, is inspired by the winemaking process. For example, eight farms in Colombia have successfully brought coffee beans processed using this method to market. Based on information from these eight farms, we can generally categorize the wine processing methods into: Acetic Fermentation (Aerobic fermentation), Lactic Fermentation (Anaerobic fermentation), and Mixed Fermentation (Mix Fermentation = Aerobic + Anaerobic).

Brewing Tips:

Recommended Brewing Method: Pour Over     Vessel: V60     Water Temperature: 90-92°C     Coffee Dose: 15g     Coffee-to-Water Ratio: 1:15     Grind Size: Medium-Fine (80% passing through a 20-mesh sieve per Chinese standards)     Brewing Technique: Pulsed Pouring             Start with a 30g bloom for about 30 seconds, then pour 125g of water in small circular motions from the center. At the point where the water level drops close to exposing the coffee bed, continue pouring up to 225g. Remove the filter when the water level is about to expose the coffee bed again. (Bloom time marks the start.) Total brew time: 2 minutes 00 seconds.
