Marsellesa

Marsellesa — A Sarchimor type from Timor Hybrid 832/2 crossed with Villa Sarchi CIFC 971/10, selected for leaf rust resistance by ECOM and CIRAD in Nicaragua and released in 2009. Compact and early bearing, it has spread quickly through Central America.

Bright citrus and red fruit with honey sweetness and a clean cup; careful processing brings out genuine specialty character.

Brewing Tip

Pour-over at 91-93 °C, 1:15, medium grind, staged pours, balancing body against fruit acidity.
