Paraiso

Paraiso — Bred in Brazil by EPAMIG with the Federal University of Vicosa from a 1980 cross between Catuaí Amarelo IAC 30 and a rust-resistant Timor Hybrid selection, UFV 445-46. Strong vegetative vigour, excellent response to pruning and well suited to mechanised harvesting.

Flavor Profile

Citrus brightness over caramel sweetness with soft to medium acidity - balanced, clean and increasingly stable with tree age.

Brewing Tip

Pour-over at 91-93 °C, 1:15, medium grind, staged pours, balancing body against fruit acidity.
