Anacafe 14 — A spontaneous cross between a Catimor type and Pacamara, spotted around 1980 in the Department of Chiquimula in Guatemala by the farmer Francisco Manchame, then fixed by several cycles of mass selection at Anacafe. Tolerates drought, though it is not uniform from one generation to the next.
Citrus, florals and tropical fruit over bright acidity, fine sweetness and a silky mouthfeel, usually carried on very large beans.
Pour-over at 91-93 °C, 1:15, medium grind, staged pours, balancing body against fruit acidity.
