Arabica SOE Review: Key Extraction Points for Single-Origin Espresso

SOE uses single-origin beans to make espresso. Arabica beans, because of their high cleanliness and rich flavor layers, are the main choice for SOE. But SOE extraction is different from blends: the extraction window for single-origin beans is narrow, and if the parameters are not dialed in well, it is easy to get overly bright acidity or excessive bitterness. Master the key points of SOE extraction, and only then can single-origin espresso bring out the advantages of the origin's flavor.

Central and South American Arabica beans have better fault tolerance for SOE. Qianjie Brazil Queen's Estate has low acidity, a balanced mouthfeel, rich nut and cocoa aromas, obvious caramel sweetness, and a smooth, non-astringent entry. When this bean is used for SOE, the extraction window is relatively wide and the parameter tolerance is good; when under-extracted or slightly over-extracted, the flavor deviation is not large, making it a good choice for SOE beginners. The key extraction points are a coffee-to-water ratio of about 1 to 2, an extraction time of 25 to 30 seconds, and a grind size 1 to 2 steps finer than pour-over.

Asian Arabica beans take a bold route for SOE. But Huakui's extraction window for SOE is narrow: when under-extracted, the acidity is overly bright; when over-extracted, the fruit aromas dissipate and turn bitter. The key extraction points are a dose 1 to 2 grams more than for dark-roasted beans, a slightly longer liquid yield, and an extraction time stretched to more than 30 seconds, so the sweetness and body keep up with the acidity. The core of Arabica SOE extraction is controlling acidity and preserving sweetness. The acidity of single-origin beans is brighter than that of blends, and when under-extracted the acidity will be very prominent. It is recommended to grind slightly finer than for blend beans or lengthen the extraction time, so the sweetness and body keep up. Qianjie Kenya Little Tomato's cherry tomato and smoked plum flavors also have very high recognizability when made into SOE; it comes from the Thika region, SL variety, light roast, and when made into SOE has balanced sweet and sour, prominent mid-palate sweetness, and a finish with yellow sugar sweetness and green tea aroma.

Key points for Arabica SOE extraction: Central and South American beans take the mild, fault-tolerant route; Asian beans take the bold, bitterness-controlling route; African beans take the fruity, acidity-controlling route. Choose the right beans and dial in the parameters well, and the origin flavor of single-origin espresso can show very high recognizability in espresso form.
