Cold brew and ice drip are both low-temperature extracted coffees. They look similar, but they are actually two different processes, and their requirements for beans are also different. Once you understand the difference between the two, you will not hesitate when choosing beans.
First, look at the process. Cold brew is made by soaking coffee grounds directly in cold water and refrigerating for more than ten hours. It belongs to "immersion" extraction. If you are a beginner at home, it is recommended to start with cold brew. The equipment is simple and the tolerance for error is high. A fruity single-origin bean or a mellow blend can both brew a good taste. If you are interested in ice drip, then get drip filtration equipment and use light-roasted beans with rich flavor layers to explore its delicacy.
Cold brew and ice drip are not superior or inferior to each other; they simply express flavor differently. What you drink in cold brew is smoothness and roundness, while what you taste in ice drip is cleanliness and layers. Whichever style you want to drink, choose beans in the corresponding direction. Try both, and you will find that the world of low-temperature extracted coffee is more interesting than you imagined.
