How to Choose Yirgacheffe SOE: A Parameter Guide from Espresso Machines to Pour-Over

Yirgacheffe SOE typically brings Ethiopian coffee's floral notes, citrus acidity and tea-like body into a single espresso shot. It works well for Americanos and can also be tried in milk drinks. It is not a fixed flavor; a light roast leans toward aroma and fruity acidity, while a medium-light roast more easily balances sweetness and body. When choosing, first consider which brewer you mainly use at home, then decide the roast direction of the beans.

With a semi-automatic espresso machine, the grinding and extraction window for Yirgacheffe beans is often more sensitive than for dark-roast blends. You can start with 18 g of grounds and 36 g of liquid yield, aiming for an extraction time of 27 to 32 seconds, with a water temperature of about 93°C. If the entry is sharply acidic, grind slightly finer or extend the flow; if the finish is dry and astringent, coarsen appropriately so the floral and fruity notes are preserved more completely.

If you mainly drink SOE Americanos, the espresso does not need to pursue excessive body. After extraction, add 120 to 180 g of hot water to let the citrus, berry and tea notes gradually unfold; if you prefer a refreshing taste, you can also make an iced Americano directly. Ice will slow the volatilization of aroma, so it is recommended to first pour the espresso into a small amount of water, then top up with ice water; the acidity and sweetness will usually appear crisper.

If you want to make a latte or flat white, the roast level and yield ratio of the beans need to lean slightly toward sweetness. You can try 18 g of grounds extracted to 30 to 34 g of liquid yield, and keep the milk at around 140 g so the coffee still retains its identity. If the beans are very light, too much milk will dilute the floral notes; a medium-light roast Yirgacheffe more easily presents honey, citrus marmalade and a soft tea-like body.

A home moka pot can also express Yirgacheffe SOE, but the heat should not be too strong. Fill the basket and level it gently, with a grind slightly coarser than espresso; using hot water in the pot can shorten the time on the stove. When the liquid color begins to lighten and the sound becomes continuous, remove it from the heat and cool it with a cold towel. The coffee made this way has moderate strength and is suitable for drinking with added water or milk.

Fully automatic coffee machines have limited grind adjustment range, so it is recommended to choose a medium-light roast rather than a very light bean, and start testing from a higher strength setting. If the machine's default yield is too long, woody and astringent notes easily appear in the cup, so you can reduce the cup volume; if it tastes thin, increase the dose or choose the espresso mode. The aroma of Yirgacheffe needs a shorter and more concentrated extraction to stay clear.

When using immersion brewers such as a Clever Dripper or French press, Yirgacheffe presents a rounder mouthfeel. For example, with 15 g of coffee grounds and 240 g of water, the water temperature can start at 92°C, and after about 3 minutes 30 seconds of immersion, release. If you want to highlight the floral notes, shorten the immersion and use a slightly coarser grind; if you prefer sweetness and a soft texture, extend it by a few tens of seconds, and the entry will be fuller.

Qianjie Kafa Forest is suitable for observing how Ethiopian beans change in different brewers. In hot drinks it easily shows orange-like fruit notes, ripe fruit sweetness and an oolong tea-like aftertaste. With an espresso machine, the grounds-to-liquid ratio can be set between 1 to 1.8 and 1 to 2; if switching to an iced Americano, it is recommended to reduce the yield so the fruit notes are concentrated, then adjust the strength with ice water.

If you have a grinder and a dripper, Qianjie Grana Estate Geisha can serve as a flavor reference. Its aroma is more exuberant and is suitable for showcasing layers with a higher water temperature and staged pouring; however, when using an espresso machine, it is recommended to start with a longer ratio, for example 18 g of grounds yielding 40 g of liquid, to avoid the espresso being too sharp. After adding a small amount of water, the floral and fruity character will be easier to identify.

When buying Yirgacheffe SOE, you should also confirm the beans' roast date, recommended brewer and adjustment tips. Light-roast beans usually require a better grinder and stable water temperature, while medium-light roast is more forgiving of equipment and suitable for those just starting to try single-origin espresso. You can first choose a small package, record the dose, liquid yield, time and entry impression, then decide whether to adjust toward brighter, sweeter or richer next time.
