The flavor logic of light-roasted beans is "preservation": the roasting time is short, so the floral and fruity aromas and acidity of the origin are retained in greater amounts, and when brewed properly it is a bright, clean cup. In the light-roast version of Qianjie Yirgacheffe Gudingding, the citrus and green tea sweetness are crystal clear, and the acidity is a lively fruit acidity rather than a sharp, biting sourness - the sweet-and-sour sensation of light roasting is its entire meaning.

The taste of a cup of pour-over is written jointly by the origin's terroir, the bean variety, the processing method, the roast level and the brewing technique. Light-roasted beans lean toward floral and fruity notes, while medium-roasted beans excel in sweetness and body; when the parameters change, the order in which aromas are released also changes, so guessing flavor from a name is not reliable.

Storage sounds trivial, yet it determines how long a bean's flavor can last. Unopened beans can simply be kept at room temperature away from light; after opening, it is best to put them in a well-sealed container and expel as much air as possible. There is also a method for observing flavor: first smell the dry aroma, then after sipping appreciate the sweetness and the finish; iced drinks and milk coffee will differ from hot drinks in their expression. Brew the same bean several times with different parameters and write it down, and a cup suited to your own taste will become easier and easier to reproduce.

When choosing beans, you can first ask yourself two questions: what flavor do you want more, and how many parameters are you willing to adjust for it. Beans with prominent floral and fruity notes are like precision instruments - changes in water temperature, grind and flow rate all get written into the cup; blends in the nut-and-cocoa direction are like reliable companions, with stable everyday output. If several people at home have different tastes, choosing a balanced bean as the shared option and then pairing single origins for those with preferences is smarter than hoarding homogeneous beans.

When making pour-over, fix the coffee-to-water ratio and the total amount of water first, and fine-tune mainly through the grind. If you taste sharp acidity, consider that extraction is insufficient; if you taste dryness in the finish, slow the pouring, reduce the agitation force or shorten the overall duration - change only one thing at a time, then compare after the change.

If you usually switch between brewing devices and your taste swings between strong and weak, you might keep two types of beans on hand: one as an everyday staple, stable and easy to drink; the other reserved for moments of curiosity, to experience jasmine floral notes, citrus acidity or the layers of anaerobic fermentation.
