Moka pot extraction relies on steam pressure generated in the lower chamber to push hot water upward through the coffee bed, and this extraction characteristic tends to amplify the caramel notes and body in coffee. When choosing coffee beans that are not overly acidic, prioritize dark or medium-dark roasts with nutty, cocoa, and caramel flavor characteristics, then pair them with precisely set water temperature and extraction rhythm to easily make a rich, smooth cup of coffee.

The roast level of coffee beans directly affects the release rate of soluble flavor compounds in the coffee grounds. Medium-dark roasted beans have more micropores inside, so aromatics dissolve quickly when hot water flows through, and acidity has already been largely degraded and converted into mild sweetness. This bean presents warm, gentle sweetness like roasted hazelnut, brown sugar, and soft malt, with a transparent, clean texture, almost negligible overall acidity, and an impressive smoothness and balance; whether extracted in a moka pot or brewed as pour-over, it is very soft and easy to drink.

To brew Qianjie Papua New Guinea Paradise Bird, it is recommended to use a water temperature of 91°C, take 15g of coffee grounds, pair with a total water volume of 240ml, and use a coffee-to-water ratio of 1:16. The pouring process is completed in three stages: pour 35ml of water for a 30-second bloom, in the second stage pour 105ml in a thin stream in a circular motion up to 140ml, and after the liquid level drops by more than half, pour the final 100ml, keeping the total extraction time at 2 minutes 15 seconds. These parameters allow the brown sugar sweetness to be fully released, with a comfortable, long-lasting finish.

In actual moka pot operation, the grind size should be adjusted to slightly coarser than for espresso but finer than for pour-over. It is recommended to first pour about 75°C warm water into the lower chamber to reduce the time the coffee bed is exposed to dry heat, then heat on the stove until the coffee liquid flows out steadily, and remove the heat source promptly.
