The same coffee beans made into an iced americano and a hot americano taste like two completely different cups of coffee. This difference does not come from any change in the beans themselves, but from how temperature rearranges our sense of taste and smell. At higher temperatures, the human tongue is more sensitive to sweetness and umami, while low temperatures suppress the activity of some taste buds and make sourness seem more prominent.
