Mexico is predominantly surrounded by the Sierra Madre mountain ranges, with the Mexican Plateau in the center, the flat Yucatán Peninsula in the southeast, and mostly narrow coastal plains along the coasts. The country has a complex and diverse climate. Due to its many plateaus and mountains, the highland areas enjoy mild temperatures year-round, averaging between 10–26°C. The northwestern inland region has a continental climate, while the coastal and southeastern plains have a tropical climate, and the southern part features a tropical rainforest climate. Most regions have two distinct seasons: dry (October to April) and rainy (May to September).
Oaxaca: Oaxaca is located northwest of Chiapas, with the western part of the state close to the Pacific Ocean. Coffee farms are generally situated at elevations between 900 and 1,650 meters, but coffee production techniques in the state are relatively underdeveloped, and most farmers prefer traditional cultivation methods. However, this does not mean that the coffee quality from this region is poor — in the 2024 Mexico COE competition, the Las Nieves cooperative from Oaxaca won the championship in the Traditional Honey & Natural category with a Geisha variety scoring 91.13 points.
After Gustavo took over, he began cultivating coffee using agricultural techniques, planting varieties such as Gesha, Typica, Bourbon, Pacamara, SL-28, and Laurina. He also placed great emphasis on forest conservation and maintaining soil health, which helped revive this historic estate.
