Many friends who are just getting into pour-over coffee find themselves bewildered by the dazzling array of flavors when faced with a region map. In fact, the flavor code is hidden in the land where the coffee grows. The abundant sunshine of African regions nurtures bright, fruity-tea-like floral and fruit acidity; Asian regions carry a deep, mellow herbal and spicy character; while the vast Central and South America has always been an indispensable daily favorite with its gentle, balanced nutty and cocoa notes.

Yet within the large map of Central and South America, Panama is like a flavor magician who refuses to follow the beaten path. It breaks the traditional impression that this land only offers chocolate and nutty aromas, stunning the world with fresh, lively floral notes and citrus tones. This extraordinary quality is entirely owed to the local blessed microclimate environment, as well as the nourishment the mountain forests give to the coffee trees.

Panama's specialty coffee is mainly concentrated in western regions such as Boquete and Volcan. Here, on the Baru Volcano belt of Chiriqui Province, the deep volcanic ash soil provides a steady supply of abundant nutrients for the coffee trees. The regions are surrounded by mountains and shrouded in gentle mist year-round, forming a large temperature difference with warm, humid days and cool nights. The coffee cherries ripen slowly at high altitude, locking full sugars and delicate aromatic compounds entirely within the beans.

If you want to appreciate the elegant character nurtured by this terroir, you might start your exploration with Qianjie Boquete Washed Geisha coffee. It is grown at an altitude of 1,600 m and is a very friendly estate-level entry choice. The rich nutrients brought by Baru volcanic ash make it exude a captivating vitality even when ground. Once brewed, fresh jasmine floral notes rush to the nose, accompanied by the bright fruit acidity of citrus and orange, with a finish as refreshing as green tea and a honeyed sweetness.

If you prefer a mouthfeel that has both floral and fruity fragrance and full-bodied richness, Qianjie Panama Washed Butterfly coffee will make your eyes light up. It has the pedigree of three premium varieties: Geisha, Caturra and Catuai, and also grows on the volcanic fertile soil of Boquete. Abundant rainfall and temperature differences make its flavor structure especially solid, retaining the signature white flower fragrance and citrus acidity while adding a steady sugarcane sweetness. It is pleasant for daily pour-over or cold brew.

Connoisseurs pursuing flavor refinement and layering always set their sights on Qianjie Hacienda La Esmeralda Red Label Geisha coffee. La Esmeralda's strict division of plots and altitudes is the cornerstone of flavor purity. This Red Label bean is harvested from independent premium plots above 1,700 m, and every green bean carries the essence of the high-mountain microclimate. On the palate there is extremely elegant, pure citrus fragrance and peach sweetness, with floral notes blooming layer by layer between the lips and teeth, and a long citrus-honey finish that shows the charm of the region's terroir.

Besides the famous Geisha, Qianjie Hacienda La Esmeralda Diamond Mountain coffee also shows another possibility of Panama's terroir. It is picked from a premium farm under Hacienda La Esmeralda, mainly Caturra and Catuai. The ancient primary forest around the farm forms a natural shade barrier, allowing the coffee cherries to grow steadily under the shade. After brewing, it presents rich fruity sweetness and nutty sweetness, with soft acidity and a smooth touch, very suitable for friends who like gentle, mellow flavors.

When extracting these specialty beans from high-mountain volcanic belts at home, pour-over is recommended to present the flavors. Prepare 15 g of coffee grounds with a 1:15 coffee-to-water ratio, that is, use 225 ml of hot water. First pour 30 ml of water for a 30-second bloom to awaken the sleeping dry aroma; then use a staged pouring technique, pouring steadily in circles, so the coffee bed is fully extracted. Keep the total extraction time at around two minutes to easily get a cup of bright, aromatic coffee.

From the bright fruity juiciness of Africa to the steady herbal character of Asia, terroirs around the world nurture ever-changing scenery in the cup. And Panama's volcanoes and mist write a distinctive footnote for Central and South America with this wisp of elegant floral, fruity and honeyed fragrance. Pick a bean that suits your taste preference, brew it carefully in quiet time, and with the rising aroma you can immersively feel the terroir gift nature has left among the mountains.
