For pour-over Yirgacheffe, the standard is flavor layering and cleanliness: with the washed Gudingding, citrus florals and green tea sweetness unfold layer by layer under the pour-over filter paper; the natural Huakui has a richer fruit aroma, with the sweet strawberry note arriving first and the passion fruit acidity following - pour-over brings out Yirgacheffe's layering to the fullest.

The flavor in the cup is not a direct translation of the bean's name: origin, variety, processing method, roast level and brewing parameters all take part in the creation. Light-roasted beans show more striking floral and fruity notes, while medium-roasted beans have a firmer sweetness and body; adjusting water temperature, grind size and pouring method is equivalent to adjusting the order in which the aromas appear.
