In its place come vibrant floral aromas, gentle fruit acidity, and a clean, sweet finish reminiscent of green tea. To pick a cup of coffee that isn't bitter, the smartest approach is to follow the terroir of the origin. Coffee trees take root in soils of different latitudes and altitudes, absorbing sunlight and rain, and evolve distinctly different flavor profiles.
