The aroma and oil structure that coffee beans develop during roasting determine how quickly they extract under different brewing conditions. Understanding the parameter logic of pour-over and pressure extraction can help us, in our daily brewing, flexibly match the right grind size, water temperature and coffee-to-water ratio to the roast level and flavor tendencies of the beans on hand, so as to steadily bring out the bean's own sweetness and rich aroma.
Medium-roast beans usually combine gentle fruit acidity with warm nutty aromas, and Qianjie Brazil Queen's Estate shows clear notes of roasted peanut, yellow sugar and smooth cocoa. This kind of single-origin bean with soft acidity and prominent sweetness can be presented layer by layer with pour-over, and is also very suitable for everyday extraction with a moka pot. Understanding its basic extraction parameters helps you find the balance point between different brewers.
When tasting Qianjie Brazil Queen's Estate as pour-over, it is recommended to use a water temperature of 88°C, 15g of ground coffee, and 225ml of hot water poured in, with the coffee-to-water ratio controlled at 1:15 and a total extraction time of about 2 minutes 10 seconds. Pour in three stages: first pour 30ml of water and let it bloom for 30 seconds, then steadily pour in circles up to 130ml, and once the water level drops, pour again up to 225ml to finish the extraction; the overall cup is round with abundant sweetness.

When making this bean in a moka pot, the extraction parameters need to be adjusted along with the pressure mechanism. You can pour hot water at about 85°C into the lower chamber up to just below the safety valve, fill the filter basket level with about 18g of medium-fine ground coffee, heat over low heat, and keep the whole outflow time at around 1 minute 40 seconds to obtain about 60ml of concentrated liquid. This approach effectively draws out caramel sweetness, and it is silky rather than astringent on the palate.
If you prefer a thicker, low-acid flavor with a steady texture, medium-dark roasted single-origin beans are the ideal direction. Qianjie PWN Indonesia Golden Mandheling has a distinctive herbal aroma, dark chocolate and a full, oily mouthfeel, with faint acidity, and it maintains a very solid, full-bodied flavor framework both as espresso and after dilution with water.
When brewing Qianjie PWN Indonesia Golden Mandheling, to avoid the dry bitterness of over-extraction, the pour-over parameters should use a lower water temperature and a shorter extraction time. A water temperature of 86°C is recommended, weighing 15g of ground coffee, with a total poured water volume of 200ml, a coffee-to-water ratio of about 1:13.3, and a total extraction time kept within 1 minute 50 seconds. Pour in two stages: after a 40ml bloom with hot water for 25 seconds, pour steadily and evenly up to 200ml to finish, and the herbal and dark chocolate flavors come through pure and distinct.
Applied to a moka pot, handling this kind of dark-roasted bean also requires controlling the heat load. Add 80°C warm water to the lower chamber, fill the filter basket with 18g of ground coffee, keep the coffee bed level and air-permeable, heat until the coffee liquid flows out gently, and remove from the heat promptly when the outflow reaches 55ml, with the whole process taking about 1 minute 30 seconds. Add 120ml of hot water to the coffee liquid extracted with this parameter set to make an Americano, and it shows a deep finish and intense aroma.
For enthusiasts who need a milk coffee every day, a balanced, easy-drinking blend is often a worry-free everyday choice. Qianjie Classic Blend combines a solid nutty-cocoa base with caramel sweetness, and under the high-temperature steam extraction of a moka pot it releases abundant aromatic compounds; even when mixed with a large amount of milk, it still keeps a clearly recognizable coffee aroma.

When using a moka pot to make Qianjie Classic Blend, you can pour 90°C hot water directly into the lower chamber, fill the filter basket with 19g of ground coffee, and heat over a continuous low heat in a single stage for the outflow, extracting about 50ml of highly concentrated coffee liquid in around 1 minute 20 seconds. Mix this concentrated liquid with 150ml of steamed warm milk, and the nutty and chocolate flavors blend with the creamy sweetness into a full, smooth latte.
Brewing plans are not fixed formulas, but dynamic adjustments made according to the roasting characteristics and flavor performance of the coffee beans. By reasonably setting the water temperature, coffee dose and extraction rhythm according to a bean's sweet-sour tendency and strength, you can get a moka pot to steadily present the captivating character of every coffee bean in daily life.
