The Best Tasting Period of Coffee Beans


During the roasting process of green coffee beans, the internal structure continuously absorbs heat and expands, and stores a large amount of carbon dioxide. These gases have advantages and disadvantages. The disadvantage is that if there is too much, it will hinder the extraction of flavor substances by hot water. The advantage is that they will block the loss of volatile aromas.


Based on past experience, these gases will rapidly release 60% to 70% of carbon dioxide within 4 to 7 days after roasting (at this time, blooming is most likely to form a good-looking hamburger), and after only 30% to 40% of the gas remains in the bean body, their release speed will slow down significantly, which means the coffee beans begin to enter a stable stage. The brewing flavor will perform at its best within 30 to 45 days after roasting, and this period is what we often call the best tasting period.

Of course, besides checking the roast date, the flavor performance of coffee beans is also related to the storage environment. Generally speaking, after fresh coffee beans arrive, we recommend storing them in a sealed, cool, dry and dark place, and reducing the number of times the seal is opened during use. Just imagine, if a bag of beans is opened several times a day, or frequently comes into contact with humid air, then even if it is still within the recommended flavor window, the ground coffee has most likely already "gone off".


Some friends also think of putting ground coffee in the refrigerator to chill. This can indeed suppress the loss of aroma to some extent, but because coffee undergoes liquefaction during the warming process, small water droplets form inside the packaging and cause the ground coffee to absorb moisture, thereby affecting the final flavor, so Qianjie does not really recommend this practice.

After coffee is ground, how long can the flavor be preserved?


As we all know, when coffee beans are freshly ground into powder, the aroma is at its richest. These coffee aromas are actually volatile flavor compounds drifting through the air, which is how we smell them. Before grinding, the coffee bean is a complete structure, and carbon dioxide can only be released slowly through the surface layer. When the beans are ground into powder, it means the surface area in contact with air is expanded, and at this point a large amount of carbon dioxide carries the aroma compounds away at an accelerated rate, so the flavor window is bound to be shortened.

In order to find the best flavor window for ground coffee, Qianjie once did a comparative experiment, grinding Qianjie Panama Boquete Geisha coffee beans roasted on the same day into powder 30 days, 21 days and 14 days in advance respectively, then storing them sealed separately and brewing them side by side for comparison.


In the end we found that, on the premise of sealed storage and few openings, ground coffee can still deliver a decent flavor within 3 weeks after grinding, but it diminishes day by day, and once it has been stored for more than one month after grinding, the aroma completely dissipates, leaving only a bland "coffee taste".

Therefore, if you stock up on a relatively large amount at once and your coffee consumption frequency is not high, then Qianjie would suggest that after receiving the pre-ground coffee, you immediately divide it into multiple airtight jars or airtight bags for storage, opening them only as needed, so you do not have to worry about the remaining coffee aroma slipping away while you frequently open the container.

What changes in taste will appear in coffee that has been ground in advance?


Out of curiosity, last week Qianjie ground a bag of idle washed Yirgacheffe (roast date December 29, 2024) into powder, then tested its flavor state every day to see what connection there is between the storage time of the coffee grounds, the brewing state, and the final flavor performance.

Freshly ground and freshly brewed: rich dry aroma, with obvious white flower and citrus fruit aromas, as well as honey sweetness; the bloom puffed up normally, and the coffee bed kept bubbling; flavor: fresh orange peel, light floral, lemon, snow pear, plum acidity; after the temperature dropped there were aromas of melon seeds, caramel, and green tea, with a light, transparent and bright acidity.


First day after grinding: the dry aroma had an obvious fresh scent like citrus and lemon peel, the floral aroma weakened, with a slight nut and milk candy aroma, and abundant bubbles were released during brewing; flavor: sweet orange, pomelo, tea-like, lively acidity, with obvious sweet aftertaste.

The second day after grinding: the dry aroma is slightly fainter, with a fresh citrus note; the bloom does not puff up, and a small amount of bubbles emerges from the coffee bed during extraction. Flavor: dominated by the sweet-tart notes of citrus and pomelo, with a flavor profile not far off from the previous day, a caramel sensation on entry, and a green tea finish.


The third day after grinding: the dry aroma is honey, citrus and nutty; fewer bubbles during the bloom and extraction. Flavor: pomelo, lemon, tea-like, with acidity less bright than the previous day and a heavier caramel sensation.

From this it can be seen that once coffee beans are ground into powder, not only does the carbon dioxide gradually dissipate as the storage days pass, but the aroma of the brewed coffee also steadily diminishes. Take Qianjie's light-roast Yirgacheffe this time: when freshly ground it showed a crisp, bright profile; as the coffee powder contacts the air more and more times and is stored longer, the coffee's profile also slowly evolves from fresh fruity sweet-tart notes into a full-bodied caramel sensation. At that point, no matter how you adjust other parameters, it is very hard to achieve the flavor performance of when it was freshly ground.
