What is the Papayo variety, an introduction to the new coffee variety Papayo

In recent years, the coffee market has shown strong interest in rare or exclusive coffee varieties, and some special ones have recently come into the public eye through coffee competitions, among which is the Papayo variety.

It is understood that the Papayo variety, also known as Papayu, gets its name “Papayo” because the shape of its coffee fruit resembles that of a papaya. The coffee cherries are sharply oval-shaped, hence the name.

In terms of processing methods, this variety is suitable for various techniques, with good performance in washed, natural, and honey processes. The washed process brings out more chocolate flavors, along with cheese and caramel notes, while the natural process also features caramel but with more pronounced fruitiness. Of course, some producers also use anaerobic fermentation and other methods.

The green beans of this variety tend to be larger in size, which means they require a longer roasting time to fully develop their sugars and thus bring out the flavors. It can be said that with its complex flavor profile, high yield, and adaptability to different processing methods, the Papaya variety has promising potential for the future.

Currently, the Papaya variety has often won first place in local coffee competitions in Huila in recent years. However, at present, this variety is only grown in certain parts of Colombia, but more and more farmers are starting to take an interest in the Papaya variety, and it is expected to appear more and more in the market in the future.
