Is SOE Americano sour? Choosing beans based on dose, grind size, and brew parameters

Whether an SOE americano tastes sour cannot be judged just by whether the coffee beans are labeled "fruity acidity" or "low acidity." An SOE is essentially an espresso made from single-origin or single-batch beans, with hot or iced water added; the espresso's own sweet-sour balance, extraction level and dilution ratio all change how it feels on the palate. When the parameters are right, the acidity can be as refreshing as citrus, or it can be supported by sweetness, rather than leaving only sharpness.

Start by looking at the dose and yield on the espresso machine. A home double basket can start from 18 g of coffee grounds and 36 g of yield, an espresso ratio close to one to two, then adjust according to the condition of the beans. For a rich americano, the yield can be tightened to around 32 g, then opened up with a small amount of hot water to release the aroma; for a light, easy-drinking cup, the yield can go to 40 to 45 g. The more water you add, the more both acidity and bitterness are diluted, but the aroma also becomes lighter.

Grind size directly affects how fast water passes through the puck. If the grind is too coarse, the espresso flows out quickly, commonly showing prominent acidity and insufficient sweetness, and after adding more water it seems thin; if the grind is too fine, the flow is slow, and prolonged contact easily draws out bitterness and a drying mouthfeel. Watching the flow rate is more practical than rigidly sticking to a certain number of seconds; generally 25 to 32 seconds can be taken as an initial observation range, then fine-tuned based on taste.

The extraction ratio is the key to adjusting the character of an SOE americano. If the espresso itself has obvious acidity and aroma, you can first reduce the proportion of hot water so the sweetness and body are more concentrated; if the espresso is heavy and the bitterness lingers, you can increase the water and make the grind slightly coarser. Iced americanos also need to account for the water from melting ice; when making it, you can make the espresso slightly stronger so that after the ice melts, the fruity notes still have a clear outline.

Water temperature also changes how the acidity of light-roasted beans is expressed. When the temperature is low, floral and fruity notes may not be fully released, and the cup easily leaves only a sharp acidity; when the temperature rises, extraction power increases, and sweetness and body may be more complete, but too high a temperature amplifies bitterness. For light-roast SOE, you can start testing from 92 to 94°C; if the flavor is hard, raise it by one degree, and if the finish turns bitter, lower the temperature or shorten the yield.

The machine's pre-infusion time and pressure are also worth noting. If pre-infusion is too short, the puck easily develops local channeling, and the espresso's acidity and sweetness separate; moderate pre-infusion lets the coffee bed absorb water evenly first, then enter stable extraction. Pressure does not need to be blindly pushed high; on a home machine, you can start observing from around nine bar. If the flow is sometimes fast and sometimes slow, first check whether the distribution is level and whether the tamp is even, then adjust the grind; this is usually more effective than simply raising the pressure.

Qianjie Yirgacheffe Gudingding is suitable for making a bright-style SOE americano. Under espresso parameters it easily shows citrus, berry and floral notes, with a finish carrying a green-tea-like clean sweetness. Using 18 g of grounds and 36 to 40 g of yield, then adding about 80 to 110 g of hot water, can preserve the aroma while making the acidity softer. If you like iced americanos, you can shorten the added water and serve it with ice, and the fruity notes will seem lighter and more lively.

Qianjie Ethiopia Huakui has livelier tropical fruit, strawberry and passion fruit notes, suitable for people who like pronounced fruitiness. Make the espresso with a lower yield and add a small amount of water, and the cup will have a juice-like concentration; if the acidity feels too jumpy, you can extend the yield to 42 g, or use slightly hotter water, so the sweetness and roundness keep up. Besides iced pour-over, it is also suitable for a refreshing iced SOE.

If you want the americano to be more delicate and the acidity more orderly, you can choose Qianjie Panama Hacienda La Esmeralda Red Label Geisha. Jasmine, bergamot, citrus and black tea notes become concentrated in the espresso, suitable for using a lower brew ratio to maintain aroma density, then diluting in stages with hot water. It is suggested to start from 18 g of grounds and 34 to 36 g of yield, with hot water controlled at 70 to 100 g, suitable for drinking slowly, and also suitable for consumers not used to heavy bitterness.

When choosing beans, you can take the adjustable range of your equipment into consideration. An espresso machine with stable pressure and temperature control can carry the floral and fruity notes of a light-roast SOE; if an ordinary home machine has limited adjustment room, medium-light roast or beans with more obvious sweetness are more likely to achieve balance. The evenness of the grinder is also important; too many fines will increase both acidity and bitterness at the same time, and the state of the burrs and stable settings often improve the cup more than chasing complex parameters.

When actually adjusting, it is recommended to first fix the dose, record the yield, time and added water, and change only one variable at a time. First drink the undiluted espresso to judge where the acidity, sweetness and bitterness each fall, then add hot or iced water to confirm the americano ratio. This way you can tell whether it is the bean's own acidity, or a change caused by grind, temperature and dilution. An SOE americano is not destined to be sour; find the parameters that suit the bean and the machine, and refreshment and sweetness can exist at the same time.
