If you want a clear finish in your everyday cup, figuring out first whether you are going the single-origin route or the blend route will make things far easier than choosing aimlessly.

Single-origin coffee pursues the distinct character brought by the soil, climate and variety of a specific region, and its sweet aftertaste usually comes with lively floral and fruity aromas that unfold layer by layer at the back of the tongue like clear tea. Because it retains pure regional flavor, single-origin beans under a light or medium roast can gradually transform bright fruit acidity into a soft, clear sweetness; after swallowing, the mouth feels very clean, and a fruity, tea-like fragrance lingers between the teeth and cheeks for a long time.

The whole cup is transparent and sweet, and after drinking, the throat feels warm and sweet.

Some single-origin beans are better at presenting a rich, juicy mouthfeel, with fuller acidity and a deeper sweet aftertaste. Take Qianjie Kenya Little Tomato, for example: it carries juicy cherry tomato, sour smoked plum and dark berry aromas, with a three-dimensional acidity that is not harsh. When making it by pour-over, weigh out 15g of grounds, use 90°C water and a 1:15 coffee-to-water ratio, complete the bloom in 30 seconds, then use two-stage pouring up to 225ml, with the total time controlled at 1 minute 55 seconds. In the tail end you can taste a very solid brown sugar and smoked plum sweet aftertaste, with a full and rich mouthfeel.

Compared with the individual expression emphasized by single-origin coffee, the charm of blended coffee lies in its designed flavor balance and consistency from batch to batch. Blended beans are made by combining coffee beans from different regions, different processing methods and even different roast levels. By complementing each other's characteristics, the roaster fills in the flavor gaps of a single bean, making the aroma in the front, the sweetness in the middle and the nutty, cocoa finish in the back coherent and smooth, with an especially long and steady aftertaste.

Once you can read a blend's recipe, you can predict its type of finish in advance. If the recipe contains a higher proportion of washed Colombia or Guatemala, it will usually provide a clean nutty aroma and a clean sweet framework; adding natural Ethiopia will bring in a little more bright fruit aroma; and when Brazil or Mandheling appears in the recipe, it can significantly increase the body, black chocolate notes and a deep caramel aftertaste, making the finish of the whole cup stay longer.

It enters the mouth as brisk as juice, and the fruity sweetness in the finish is especially vivid.

If your daily preference is to add milk and make a latte or cappuccino, a traditional dark blend is a better fit. The lactose in milk needs a sufficiently rich nutty, caramel and cocoa base to support it. When using traditional Italian blend beans, take 18g of grounds to extract 36g of espresso, extract at constant pressure after low-pressure pre-infusion, with the total time controlled at 27 seconds, then pour in 200ml of warm milk foam. The milk aroma and coffee oils blend together, leaving a long malt sugar and dark chocolate sweetness in the mouth.

Deciding which route to choose depends mainly on what equipment you use and what flavor experience you hope to get. If you usually prefer brewing methods that can delicately reveal aromatic layers, such as a pour-over dripper or an AeroPress, single-origin beans can take you through the fruity aromas and tea-like sweet aftertaste brought by different mountains; if you use a semi-automatic espresso machine or a moka pot at home and are used to adding water or milk to espresso, blended beans can consistently provide a rich, full nutty sweetness.
