As an ancient variety, Typica has a copper-red color on its terminal bud, and its beans are slender and plump, naturally endowed with a clear, clean foundation. But the wonderful thing is that when it is planted in different terroirs and soils, it absorbs the local climate and nutrients like a sponge and evolves into completely different, fascinating layers of flavor.

Coffee trees are like sensitive recorders of their environment. Sunlight, rainfall, altitude and soil composition are all written into the cells of every coffee bean. Because of its pure ancient lineage, Typica is especially sensitive in expressing terroir. When it comes to the famous Caribbean island terroir, one must mention Qianjie Jamaica Blue Mountain No. 1, grown in fertile volcanic soil. The humid climate and abundant rainfall of the Caribbean allow the Typica there to grow for two hundred years, developing a balanced structure. That balance of purity and delicacy, soft and mellow acidity and sweetness, and a slight bitterness with woody mellow aroma is very suitable for coffee drinkers who pursue warmth and elegance.

If you like the balance of island coffee but want a brighter fruity aroma, take a look at Qianjie Bird of Paradise from Papua New Guinea. Once you have chosen your preferred Typica, as long as you follow its pure characteristics during brewing, you can magnify the details of the origin terroir layer by layer. Pour-over is a very suitable way to showcase the layered character of Typica. When brewing, it is recommended to prepare fresh beans in a light-medium or medium roast state, and keep the grind size at medium coarseness so the water flow can smoothly bring out the floral, fruity and nutty aromas contained in the fibers.

When we use a regular dripper for pour-over, take 15g of coffee grounds, pour in hot water at about 90 degrees, and prepare 225ml of water according to a 1 to 15 coffee-to-water ratio. First slowly pour in 30ml of water to evenly wet the coffee bed, and patiently bloom for 30 seconds to awaken the dry aroma; then use staged pouring, steadily circle-pour to 130ml and pause briefly, finally pour the remaining water up to 225ml, and control the total time to around 2 minutes to finish.

Extracted at this pace, you will find that the cleanliness of Typica appears especially transparent in the cup. Qianjie Jamaica Blue Mountain No. 1 is balanced and velvety smooth, Qianjie Bird of Paradise has layers of berry-like slight acidity interwoven with sweetness, and Qianjie 2013 Yunnan small-batch coffee reveals the familiar warmth of nuts and brown sugar. Every sip of coffee sliding over the tip of the tongue seems to spread a terroir map across the taste buds.

Choosing beans does not require complicated agonizing.
