The sweetness of honey-processed coffee beans often changes with the extraction method: a finer grind concentrates the fruity aromas, while higher water temperature and pressure give a fuller body. When choosing beans, it helps to first look at the equipment you use most, then set parameters for floral notes, fruity acidity or tea-like character. Qianjie Ethiopia Huakui, Qianjie Kenya Little Tomato and Qianjie Kafa Forest happen to correspond to three different approaches to adjustment.

Qianjie Ethiopia Huakui is suited to drawing out tropical-fruit aromas with pour-over. Use 15g of grounds, water at 91°C, a 1:15 coffee-to-water ratio and a total of 225ml of water; first pour 45ml for a 30-second bloom, then pour in two stages up to 225ml, keeping the total time between 2 minutes 00 seconds and 2 minutes 10 seconds. Use a medium-fine grind for a brighter entry, and the sweet aroma stays lively as the cup cools.
If Huakui tastes sharply acidic with sweetness that cannot keep up, grind slightly finer or raise the water temperature to 92°C, but do not greatly increase agitation at the same time. If astringency appears in the finish, for the next cup still use 15g of grounds, 225ml of water, 91°C and a 30-second bloom, switch to a single-stage pour, keep the total time to 1 minute 50 seconds to 2 minutes 00 seconds, and reduce disturbance of the coffee bed.
Qianjie Kenya Little Tomato has clear acidity, and flavors such as cherry tomato and smoked plum need a crisper extraction rhythm. We suggest 15g of grounds with 225ml of water, 92°C and a medium-fine grind; use two pours, first 45ml for a 30-second bloom, then pour up to 225ml, for a total time of about 2 minutes 05 seconds. This preserves the juicy character while letting a brown-sugar-like sweetness appear at the finish.
If Little Tomato tastes only acidic and lacks roundness, grind one notch finer while keeping 15g of grounds, a 1:15 ratio, 92°C and a total time of 2 minutes 05 seconds; if the smoked-plum character becomes dry, switch to 91°C, keep two pours with a 30-second bloom, and control the endpoint at 1 minute 55 seconds to 2 minutes 00 seconds to reduce extraction in the finish.
The orange, apricot and oolong tea notes of Qianjie Kafa Forest are suited to a gentle unfold. Use 15g of grounds, water at 90°C and a medium-fine grind, with three pours: first pour 45ml for a 30-second bloom, pour the second stage up to 150ml, and complete 225ml with the third stage, for a total time of about 2 minutes 10 seconds. The lower temperature keeps the tea-like note cleaner, and as the cup cools, a ripe-fruit sweetness becomes clearer.
If Kafa Forest tastes thin, raise the water temperature to 91°C, still using 15g of grounds, 225ml of water, a 30-second bloom and three pours, and extend the total time to 2 minutes 15 seconds; if the tea-like note turns astringent, return to 90°C, grind slightly coarser, and keep it to about 2 minutes 00 seconds. Change only one thing at a time, either grind or water temperature, and comparisons will be easier.
When honey-processed beans are used for espresso, the grind should be adjusted around the flow rate rather than copying pour-over logic. To make an espresso with Huakui, use 18g of grounds, a medium-fine grind and 9bar constant-pressure extraction, with a low-pressure pre-infusion first, yielding a final 36g of liquid in a total time of 26 seconds. This keeps the fruity aroma recognizable and prevents it from tasting hollow when diluted into an americano.
For espresso with Little Tomato, use 19g of grounds, a slightly finer grind and 8.5bar constant-pressure extraction, with low-pressure pre-infusion yielding 38g of liquid in a total time of 27 seconds. If the entry is sharp, grind a little finer while still holding to 19g, 38g and 27 seconds; if the finish is dry, grind slightly coarser, or shorten the constant-pressure extraction to 25 seconds, and the brown-sugar and jam notes will show more in milk coffee.
If you like the full body from a moka pot, you can test another expression with Kafa Forest. Put 12g of medium-ground coffee in the basket, fill the lower chamber with 120ml of water at 92°C, and heat over medium-low heat for 1 minute 45 seconds; remove from the heat promptly once the liquid flows continuously, keeping the total time within 2 minutes 00 seconds. The orange acidity becomes softer, and the apricot sweetness and tea-like note are better suited to drinking over ice.

When buying honey-processed beans, look at the flavor description together with the roast direction: lighter beans suit low to medium water temperatures and a finer grind to highlight floral and fruity notes, while a medium roast can carry the intensity of espresso pressure or a moka pot. First choose a bean that matches the equipment on hand, then use one clear set of parameters to observe the changes, and sweetness, acidity and aftertaste will gradually form your own standards of judgment.
