The processing method of coffee beans directly affects the direction of the flavor, and in the scenario of cold brew, the difference between natural and washed is amplified especially clearly. The two processing methods each have flavor directions they excel at, and choosing the right processing method can give cold brew a completely different character, which is also a step worth pondering carefully when selecting beans.
The characteristic of washed processing is clean and transparent. During processing, washed beans have their pulp and pectin removed, so there is less of a sense of impurities in the flavor and the mouthfeel is pure. Qianjie Yirgacheffe washed version performs very typically in cold brew: the aromas of citrus and jasmine are clearly layered, a bright fruity acidity flashes at the entry, and it finishes cleanly and neatly, as refreshing as a glass of iced lemonade. For friends who like a transparent mouthfeel and do not want too many off-flavors, washed beans in cold brew will make you drink very comfortably, and the aftertaste is clean as well.

Natural processing is a completely different character. Natural beans are dried together with the pulp, and during fermentation they absorb a large amount of fruity aromatic substances, giving a rich flavor and complex layers. Qianjie Huakui is an excellent representative of natural beans in cold brew: the tonality of strawberry and tropical fruit is intense, and at the entry it is like jam melting open, with a dense and heavy sweetness. The low-temperature slow steeping of cold brew is just right to slowly release these rich aromas, not rushing up all at once, but gradually unfolding with every sip; by the second half of the cup you can still taste new layers, and after it warms up the sweetness actually becomes more obvious.
If you want to find a balance point between the two, Qianjie Colombia Huila is an interesting choice. Its flavor lies between the cleanliness of washed and the richness of natural, with a soft layer of fruity aroma floating on a base of caramel and nuts. After cold brewing, the overall balance is good, with both body and no muddiness, suitable for friends who want both cleanliness and a little fruity thickness, and it is not easy to get tired of drinking it daily.

The honey processing option is also worth noting; it lies between washed and natural, retaining part of the pectin for drying. Qianjie Yunnan has a honey-processed bean whose honey-like sweetness is very prominent after cold brewing, with a rounded mouthfeel; the fruitiness is not as intense as natural, but it has a bit more thickness than washed. Honey-processed beans in cold brew often achieve both cleanliness and richness, suitable for people who want an in-between style; the expression of sweetness often exceeds expectations, and adding a little ice does not easily make the flavor dissipate.
The choice of processing method is essentially the choice of flavor preference. If you want clean and refreshing, look for washed beans; if you like rich fruity aroma, look for natural beans; for a compromise balance, you can look at honey processing. Once you clearly recognize what style you like, you will have a clear sense of direction when choosing beans for cold brew. Pick beans according to that direction, and every pot of cold brew is worth looking forward to.
