Coffee beans suitable for cold brew and ice drip usually have bright fruity aromas or abundant ripe-fruit sweetness. Under low-temperature, slow extraction, these beans can show a smooth, delicate juice-like texture and a clean finish. If you want to fully express the same bean in different brewers, the key is to precisely adjust the pouring method, coffee-to-water ratio and water temperature according to the roast level and bean density.

In light-roasted pale coffee beans, the rich aromatic substances and fruit acids need to be moderately activated. During low-temperature immersion, there is less water disturbance and aroma release is relatively steady; if hot water is used instead, stepped pulse pouring should be used to improve flavor separation and avoid excessive temperature causing bitterness in the finish, so that both cold and hot states can present open, layered flavors.

Qianjie Yirgacheffe Gudingding shows fresh citrus fruit aromas, ripe berry flavors and pleasant white floral notes, with a long green-tea-like sweet aftertaste at the back of the throat. This bean is dense and can show lively acidity and sweetness in a pour-over recipe with moderate water temperature, while during cold-water immersion the fruit acids are modified to be extremely soft and the overall flavor becomes very mild and transparent.

For a hot pour-over recipe of Qianjie Yirgacheffe Gudingding, you can use a water temperature of 91°C, weigh 15g of coffee grounds, set the grind size to medium-fine, and control the total pouring water to 225ml. Pour in three stages: first pour 30ml of water for a 30-second bloom, then steadily pour in circles to 130ml and pause, and after the liquid level drops, evenly pour the remaining water to 225ml, completing extraction in a total time of 2 minutes 10 seconds.

If making Qianjie Yirgacheffe Gudingding as cold brew, it is recommended to use 5°C refrigerated drinking water, take 30g of slightly coarser coffee grounds into a sealed filter pitcher, pour 360ml of cold water directly in a single pour, shake gently to mix, then place it in the refrigerator to steep, and filter out the coffee liquid when the total time reaches exactly 12 hours, when the citrus and tea aromas are especially sweet and mellow.

Qianjie Ethiopia Huakui has a lively, full tropical fruit character, exuding rich sweet aromas like strawberry jam and passion fruit, with round and vibrant fruit acids. This bean has sufficient sugar under natural processing and is not only suitable as a base bean for cold brew; made as flash-chilled iced pour-over, it can also bring out bold berry aromas and a refreshing taste.

When making iced pour-over with Qianjie Ethiopia Huakui, place 100g of ice cubes in the lower server in advance, use a water temperature of 90°C to brew 16g of coffee grounds, and plan to pour 140ml of hot water. Pour in two stages: pour 35ml of hot water for a 30-second bloom, then pour the remaining 105ml of hot water in a slightly stronger center circular stream, finishing before the liquid level drops, keeping the total extraction time at 1 minute 50 seconds; the coffee liquid falling into the server cools instantly and the flavor is especially bright.

Qianjie Colombia Xizhua shows abundant passion fruit, blackcurrant, dark purple grape and ripe apricot flavors, with a strikingly prominent juice texture. This bean can show a fermented-rice-like mellow aroma and rich sweetness in a drip-style ice drip device, and can also be used as a single-origin espresso with an espresso machine for pressurized extraction, releasing intense complex fruit aromas.

When using an espresso machine to brew Qianjie Colombia Xizhua, set the brewing water temperature to 93°C and the extraction pressure to 9bar, use 18g of coffee grounds at an extremely fine grind for extraction, set the yield to 38ml, and strictly control the total extraction time at 28 seconds; the resulting espresso is full in acidity and sweetness with golden crema, and after adding ice water it becomes a cup of iced Americano with clear flavor.

If making ice drip coffee with Qianjie Colombia Xizhua, take 40g of medium-grind coffee grounds into the ice drip filter cup and level the surface, add 400ml of 0°C ice-water mixture on top, adjust the drip valve to maintain slow drip pouring, keep the drip rate at about 45 drops per minute, and control the total ice drip extraction time at 3 hours 30 minutes; after extraction, the flavor is as sweet as grape juice.

Understanding the roasting characteristics and flavor baseline of each coffee bean helps us flexibly adjust parameters in daily extraction. By carefully matching the pouring stages, extraction time, coffee dose and water temperature, whether enjoying a cool, clear low-temperature iced drink or savoring a steaming freshly ground pour-over, you can easily obtain a rich, layered and pleasant coffee flavor.
