Under light roasting, this bean shows vivid citrus sweetness and acidity, soft white floral aromas, and a sweet finish like green tea. For this type of decaf bean that emphasizes refreshing clarity and tea-like feel, reducing the extraction stages and increasing the flow rate can bring a purer performance in the cup.

For Qianjie Yirgacheffe Gutingding, it is recommended to use a two-stage pouring scheme to preserve its lightness. Use 15g of coffee grounds, set the water temperature at 89°C, control the coffee-to-water ratio at 1:16, with a total water amount of 240ml, and a total brewing time of about 1 minute 45 seconds. When pouring, first bloom with 35ml of water for 25 seconds, then pour continuously and evenly in a medium stream, directly filling the water up to 240ml, keeping the coffee bed dripping steadily.

The two-stage fast brewing scheme effectively reduces excessive disturbance of the water flow to the coffee ground bed, lowers the chance of fine particles settling and clogging the filter paper, and makes Gutingding's citrus freshness and green tea aftertaste appear especially transparent and clean. If the weather is hot, you can also pour the brewed hot coffee liquid directly over ice to cool it quickly, and the citrus fruit acidity will become crisper and more refreshing.

For batches with higher requirements for flavor finesse, such as Qianjie Panama Hacienda La Esmeralda Red Label Geisha, its flavor is characterized by elegant jasmine floral aroma, bright bergamot acidity, and a mellow black tea texture. When brewing this kind of exquisitely flavored decaf Geisha, gentler water temperatures and delicate pouring techniques are needed to protect its extremely fragile volatile aromatic molecules.

To extract Qianjie Panama Hacienda La Esmeralda Red Label Geisha, a slightly lower water temperature of 88°C can be used, taking 16g of grounds, pouring 240ml of hot water, with a coffee-to-water ratio of 1:15, and controlling the total time at about 2 minutes 15 seconds. During brewing, use a gentle three-stage method: bloom with 40ml of hot water for 35 seconds to fully degas, then gently pour in circles up to 140ml in the second stage, and after the liquid level drops by more than half, pour gently from the center outward in an extremely thin stream up to 240ml.
