Sun-dried processed coffee beans always carry a rich, sweet aroma that hits the nose, ranging from ripe berries and tropical fruits to fermented vinous notes, every sip is like drinking fruit juice. But when facing a bean list, there are usually two distinctly different paths before you: one is single-origin beans that pursue pure regional terroir, and the other is blended beans that emphasize balanced and complementary flavors. Which path to choose depends entirely on what you want to taste in this cup of coffee.

The core of single-origin sun-dried beans lies in understanding the character of the region and the personality of the green bean itself. A sun-dried bean is harvested from a specific estate and dried whole, so its flavor is deeply imprinted with the local soil, sunlight and altitude. If you enjoy a layered, boldly aromatic experience, single-origin sun-dried beans deliver extremely distinct recognizability, and each change in temperature reveals a different fruity note.

For example, the Geisha from Qianjie Grana Estate in the Americas is a highly representative single-origin sun-dried bean. It blends the elegance of orange blossom, the clean sweetness of apricot and a strawberry jam character. For pour-over, use 15g of grounds with 91°C water, at a 1:15 ratio, pouring 225ml of water. First pour 30ml for a 30-second bloom, then pour in two stages, circling steadily to 130ml, and after the water drops, pour to fill 225ml, for a total time of 2 minutes 05 seconds, and the floral and fruity sweetness is fully expressed.

Compared with the bold swings of single-origin, blended beans take the path of harmony and stability. In many classic espresso blend recipes, roasters deliberately add a certain proportion of sun-dried beans, precisely to use the full sweetness and complex fruit aromas brought by sun-drying to make up for the thin body and finish of washed beans, so the whole cup finds a steady footing between nuts, caramel and soft fruit acidity.

Understanding the proportions on a blend list can help you quickly predict the flavor in the cup. For example, a recipe of 70% washed medium-dark roasted beans with 30% sun-dried light-medium roasted beans usually has a main note of rich nutty chocolate, with a hint of candied fruit sweetness in the finish; while if sun-dried beans make up more than half of the recipe, the juiciness, sweet aroma and tropical fruit aromas of the whole cup will clearly rise, and the mouthfeel will be brighter and livelier.

If you own an espresso machine and are obsessed with the flavor of sun-dried beans, a single-origin espresso, or SOE, is a way to show personality. For example, with Qianjie Colombia Sidra in a light-medium roast, it carries intense aromas of passion fruit, blueberry and dark grape juice, and when made into an SOE espresso, this tropical fruit impact is magnified several times over.

When extracting this sun-dried Sidra to make an SOE espresso, use 18g of coffee grounds for constant-pressure extraction in the machine, control the yield to 36g, and keep the total extraction time at 26 seconds. The espresso obtained this way has fine crema, with a full tropical fruit sweetness and acidity on entry, then turning into a rich grape sweetness, whether drunk straight or diluted with water as an Americano, the aroma is especially bold.

When making milk coffee, the two have clearly different roles. After sun-dried SOE is added to milk, the bright fruit acidity blends with lactose, often bringing a light and lively flavor similar to strawberry milk or blueberry yogurt, suitable for friends who like fruity notes; while a traditional blend containing sun-dried beans made into a latte leans more toward the rich, coating feel of toffee, cocoa and nutty cream, suitable for daily drinking for those who pursue a thick, smooth cup.

Once you clarify the difference between single-origin and blends, choosing beans is no longer a struggle. If you like to brew pour-over and savor slowly in your leisure time, or prefer a bright, intense tropical juice character, decisively choose single-origin sun-dried beans and explore slowly; if you pursue a stable, forgiving cup every morning, or like a rich, rounded classic milk coffee, choosing a bag of well-formulated sun-dried blend beans will be more thoughtful and comfortable.
