Bright, lively fruit acidity is often too unfamiliar to them, and instead easily leaves the impression that "coffee is sour and astringent." So when choosing beans, the three dimensions of roast level, processing method and flavor description are worth spending an extra two minutes to understand clearly.

Roast level is the first threshold that determines the taste on the palate.
