Yunnan coffee

On China's coffee map, Yunnan carries ever more weight. And when talking about Yunnan specialty coffee, you cannot avoid the Typica variety, nor can you avoid this Yunnan sun-dried Typica that Qianjie has been making since 2013.

Typica: the perseverance of an old variety

Typica is one of the classic original varieties of Arabica, with a clean, elegant flavor and good sweetness, but low yield and weak disease resistance make it not "cost-effective" for commercial cultivation. In Yunnan's main producing regions, high-yield hybrid varieties such as Catimor are the mainstream -- but precisely because of this, the estates that persist in growing Typica are mostly in it for quality.

What this bag of beans tastes like

Qianjie 2013 Yunnan sun-dried Typica uses sun-dried processing and a medium-dark roast profile: clean on entry, with citrus and caramel aromas interwoven; the medium-dark roast brings notes of nuts, chocolate and brown sugar, with medium acidity and harmonious layers, letting you clearly taste the terroir of the Yunnan producing region.

The advantage of sun-dried processing is this: the coffee cherries retain more sugar during drying, so the fruitiness and sweetness are fuller than in traditional washed processing -- which is also the representative processing route behind the flavor upgrade of Yunnan beans in recent years.

Why it is said to have witnessed the growth

In 2013, Yunnan specialty coffee was still a niche concept. Qianjie has kept making Yunnan Typica since that year, for more than a decade straight -- in an era when the commercial environment looked unfavorably on old varieties, this perseverance itself says something: good terroir plus a good variety plus careful processing means the ceiling for Yunnan beans is far higher than outsiders imagine.

How to drink it

This coffee is highly versatile: pour-over is the mainstream choice, with a 1:15 coffee-to-water ratio and a water temperature of around 88°C, letting the nutty chocolate notes unfold very comfortably; using a French press or moka pot also brings out different flavors. At an everyday staple price with specialty-grade performance, it is a reliable starting point for getting into Yunnan beans.

Supporting Yunnan coffee has never been a matter of sentiment -- beans made as carefully as Qianjie Yunnan sun-dried Typica let their flavor speak for themselves.
