Choosing medium-dark roasted beans with nutty and caramel notes is the foundation, but the mineral content and hardness of the water also play a key role in how acidity and sweetness present themselves. Using the right brewing water allows the deep sweetness in the beans to be released more smoothly.

The calcium and magnesium ions and bicarbonate in water are the core elements that influence extraction quality. If you choose purified water with very few minerals and a low TDS value, the water has a weaker buffering capacity against acidity, which easily amplifies the coffee's original subtle fruit acidity and can even make the mouthfeel seem thin. This kind of pure water is better suited for presenting the floral and fruity aromas of light-roasted beans, but is not very helpful for showcasing the warm, rounded base of low-acid beans.

When pursuing a low-acid, smooth mouthfeel, choosing quality drinking water with a TDS between 80 and 130 can make the coffee's texture fuller and the nutty and cocoa aromas more prominent.
