The dense, delicate golden crema on the surface of espresso comes from the carbon dioxide and coffee lipids locked inside the coffee beans during roasting. Beans with a darker roast level, a loose structure and active degassing release a large number of tiny bubbles more easily when high-pressure hot water penetrates the puck, forming a thick and lasting emulsified layer. To get a thick crema, you first need to pay attention to the pore state created by the bean structure and the roast level.

During espresso extraction, water temperature, grind particle size and the powder-to-water output ratio together determine the thickness and mouthfeel stability of the crema layer. A darker roast level is usually best paired with a slightly lower water temperature, which fully extracts the lipid components inside the coffee while avoiding the scorched, dry sensation that high heat can bring out; a moderate grind setting builds suitable resistance, letting pressure push the golden foam out evenly through the puck.

Among the beans that emphasize a thick crema and rich mouthfeel, Qianjie Black Cocoa Blend has a very distinct style. This bean uses a dark roast to bring out dark black chocolate, roasted almond and thick caramel sweetness; its own lipid content is very abundant and its acidity is extremely low, so whether drunk as straight espresso or used as a base for milk coffee, it gathers a thick, dense, deep golden-brown crema film on the surface of the cup.

When making Qianjie Black Cocoa Blend espresso, it is recommended to set the machine water temperature at 90°C, use 20g of finely ground coffee, set a constant extraction pressure of 9bar, and extract 36ml of espresso with a steady single-stage pressure profile, keeping the total extraction time at 24 seconds. The shorter time and slightly lower water temperature fully support a thick nutty cocoa butter feel, smooth and dense on the palate.

If you prefer to make Black Cocoa Blend into a morning americano, you can keep the above espresso parameters unchanged, pour the 36ml of espresso into 160ml of 75°C hot water, and mix by adding water in two stages. This lets the golden crema on the surface of the espresso float on top of the clear coffee liquid, preserving the rich aroma of cocoa caramel while bringing a refreshing, clean drinking experience.

If you want both a considerable crema thickness and a balanced nutty and caramel flavor, Qianjie Classic Blend is a very practical choice. This medium-dark roasted blend combines caramel sweetness with roasted hazelnut aroma, has a solid body, and shows a very smooth mouse-tail flow during extraction, forming a crema that is even in color and dissipates slowly.

When brewing Qianjie Classic Blend espresso, a water temperature of 92°C is recommended; take 18g of finely ground coffee, level the grounds and tamp, then brew under the standard 9bar extraction pressure with a stable single-stage extraction mode, set the total extraction time to 27 seconds, and finally collect 36ml of espresso. This 1-to-2 extraction ratio precisely brings out a smooth hazelnut-chocolate sweetness.

For enthusiasts who prefer more origin distinctiveness, soft sweetness and a delicate crema, Qianjie Specialty Blend shows excellent harmony. This recipe combines the nutty sweetness of the Brazil Cerrado region with the warm cocoa-caramel tonality of the Colombia Huila region; the roast level sits in the medium-to-dark range, and the extracted coffee lipids are glossy, with a clean, sweet and rounded mouthfeel.

When extracting Qianjie Specialty Blend with an espresso machine, you can set the water temperature to 93°C, weigh out 18.5g of coffee, set 9bar pressure for steady pressurization, keep the total extraction time at 28 seconds, and output 40ml of espresso. The slightly longer output fully releases the soft sugarcane sweetness of the Huila region while maintaining a fine, velvet-like pale gold crema on the surface.

Qianjie Specialty Blend is not only suitable for an espresso machine; it can also be extracted with a pour-over kettle. Use 15g of medium-fine ground coffee with 91°C hot water at a 1:15 coffee-to-water ratio, for a total water volume of 225ml and a total time of 2 minutes 10 seconds. Use a three-stage pour: first pour 30ml and bloom for 30 seconds, then gently pour in circles around the center up to 130ml, and once the liquid level drops slightly, fill to 225ml to finish.

The key to adjusting espresso crema and flavor lies in observing changes in flow rate and color. If the flow is too fast and the crema is thin and pale, gradually adjust the grind setting finer or slightly increase the dose; if the flow drips slowly and the surface crema is dark and scorched, adjust the setting coarser or slightly adjust the output volume. By making tiny adjustments to specific parameters, you can let the chosen bean fully express its unique lipid aroma and flavor.
